I have missed Rhiannon’s postings for a couple of months , so I’m happy to see her post this morning. As regular readers of KenMaursCorner know I love sharing photos of her fantastic cakes! Yesterday I bought a big bag of Calypso Mangoes, and I think they will be perfect for this recipe.
My summer blogging hiatus has lasted a lot longer this year than usual. The reasons for which are much less exciting than the trip to New Zealand and much less dramatic than the threats of bushfire seasons the summers prior. While our summer heat has certainly kept me out of the kitchen, I’ve also begun a new full time job which has left me with little time to do anything other than sleep. Today marked my third month at the new job, and for the most part I’m not sure where the time has gone. How exactly is it February already? I’m still stuck somewhere in September 2014.
Alas, time marches on and all the annual events are arriving with it. And what is an event without cake? So back in the kitchen I go!

Mangoes are such a dear treat around here, I can’t imagine buying a whole bag of them! I’d have to make the above with strawberries or raspberries perhaps!

Eliza, Mangoes grow very well in Queensland. Commercial crops as well as in home gardens. My last home had a well loved Kensington Mango with most fruit weighing about half a kg (I lb) I bought 6 Calypso mangoes (smaller and sweeter fruit) for Au$2 on Wednesday. As the Au$ buys only 76 US cents at the moment , it was a very good buy! I LOVE mangoes 🙂
